Select the number of players before you start, you cant change the number after you start it, and make sure not to reload the page while in the middle of a game or else you will lose all of the score/phase data.
To use the Dealer Teller, simply set the names of the players in where it says "Player 1" and "Player 2". Then in the dealer order box from top to bottom put the order of dealers at your table according to what the player numbers originally were.
